A while ago I found myself having to come up with an appetizer at the last moment, with only a few things in the fridge and no time to go to the supermarket. And so I created the following dish with Belgian endives, simple as it is tasty, fast and perfect for a snack or as an appetizer or side dish. It is so true that sometimes the simplest ideas are the best!
Ingredients
  • 4 Belgian endives
  • 12 oz (350 gr) grated smoked mozzarella (or scamorza)
  • to taste extra virgin olive oil
  • to taste black pepper
  • to taste table salt
Instructions
  1. STUFFED BELGIAN ENDIVES WITH SMOKED GRATED MOZZARELLA
  2. PREPARE STUFFED BELGIAN ENDIVES - Wash and dry the endive, cut it in half and stuff with grated smoked mozzarella (or scamorza) and black pepper. Now, lightly grease and season the bottom of the heads, then place the endive on a baking tray lined with baking paper. Bake at 390 °F for about 20 minutes, until the cheese is creamy and the vegetables are golden. Serve immediately!
