These beer braised sausages are so good and extra juicy, and absolutely easy to make! The only things you need are your preferred sausages and beer, and a probe thermometer. The sausages are slowly baked, then re-hydrated into a beer infusion. Simple and tasty!
  • 8 sausages
  • 6 cans (2 Lt) beer
  1. BAKED SAUSAGESFirst of all, preheat the oven to 275° F (135° C). After that, place the meat on a rack, then insert the meat thermometer into one of the sausages entering the probe pass through one of the extremities: you want the probe precisely in the middle of the meat. Finally, bake until the thermometer reach 180° F (82° C): : commonly, it needs about 45 mins.
  2. BEER INFUSIONMeanwhile the sausages cook into the oven, pour the beer into a pot, then place over medium heat. Bring slowly the beer to simmer, discarding the foam with a slotted spoon a little at a time. Boil the beer until it does not foam anymore. If the foam risks to pour out from the pot, move the pot far from the heat for a few seconds. Once the foam is exhausted, simmer the beer 5 minutes more, then turn off the heat.
  3. BEER BRAISED SAUSAGESOnce the sausages reach 180° F (82° C), reheat the beer infusion until it simmers again. At this point, place the pot far from the heat, then immerse the sausages entirely into the beer, and cover with a lid. Let the meat hydrate 40 mins, then serve immediately. The beer braised sausages pair perfectly with vegetables like Ratatouille, white beans salad and Italian Peperonata. Don't forget to uncork a couple of beers!
