SHRIKHAND RECIPE - Indian sweet & spicy flavored yogurt

  • • 5 cups (1 kg) strained whole yogurt (Indian or Greek)
  • • ⅔ cup (140 g) powdered sugar
  • • 2 tbsp milk
  • • 1 tbsp almond flour
  • • 2 tbsp Almonds, coarsely chopped
  • • 2 tbsp Pistachios, coarsely chopped
  • • 16 to 20 saffron threads (alternatively, ½ tsp saffron powder)
  • • 1 tsp cardamom powder
  • • 1 pinch table salt
  1. STRAINED YOGURTThe traditional Shrikhand is made with Indian curd previously strained. If Indian curd is not available, the closest ingredient is strained whole Greek yogurt.Prepare the yogurt: you want it as dense as possible, so in case the yogurt is too liquid, pour it into a stainless mesh colander over a bowl and let drip the liquid part a few hours into the fridge.Alternatively, use extra-dense strained Greek yogurt.
  2. PREPARING THE SHRIKHANDFirst, warm the milk, then add the saffron and stir well. After that, sift the sugar and chop the dried fruits, then pour all the ingredients into a bowl along. Stir well until consistent, then store wrapped into the fridge at least 2 hours up before serving.
  3. SERVING AND STORINGServe the Shrikhand cold into single serving cups. In case, store the remaining yogurt in a box or a jar into the fridge up to 48 hours.
