    GREEN BEANS SALAD with marinated tofu and almonds

    Today I propose you a savory and healthy green beans salad, perfect for a quick lunch, but full of energy; Ideal for a lunchbox at work or a picnic! Tofu marinated with soy sauce in contrast with the sweetness of green beans and almonds, will give a unique flavor to this simple and tasty salad. A tip: use a  soy sauce with low sodium content, otherwise you risk to oversalt the tofu!

    • 1 lb (450 gr) green beans
    • ½ lb (225 gr) extra firm tofu
    • 1 cup low-sodium soy sauce
    • 3 tbsp extra virgin olive oil
    • 1 tbsp slivered almonds
    • ½ tsp black pepper
    • 1 pinch of table salt

    FIRST STEPS

    Preheat oven to 355 ° F. Cut the tofu into cubes ¼ inch wide. Pour the tofu submerged with soy sauce in a bowl and marinate 30 minutes into the fridge. Meanwhile, wash the beans and steam or boil 5 minutes.

    GREEN BEANS AND TOFU INTO THE OVEN

    Season the green beans with 2 tbsp of extra virgin olive oil and a pinch of salt. Pour the beans on a baking tray lined with parchment paper, making sure not to overlap the vegetables. Add the drained tofu and bake at 355 ° F for about 12 minutes. Meanwhile, season the slivered almonds with 1 tbsp of olive oil and add the almonds  on the other ingredients. Finally, broil for 3 minutes, until the tofu, almonds and green beans are golden brown.

    FINISHING

    Remove the baking tray from the oven and season with a sprinkling of black pepper. Pour the green been salad into bowls and serve slightly warm  or at room temperature.
