    ITALIAN FRITTATA with caramelized onions

    Italian frittata! This recipe is a classic in Italy, cooked along with various ingredients like herb, spinach, mushrooms and… onions! Today I prepared a tasty onion frittata: one of the preferred recipes of the Italian people. Just whisk and combine the eggs with caramelized onions, then cooked and flipped. I love to serve onion frittata with fresh greens or sauteed dandelions, warm or at room temperature!

          • 5 tbsp unsalted butter
          • 3 tbsp extra virgin olive oil
          • ⅓ tbsp sugar
          • ⅓ tsp black pepper
          • to taste table salt

    ONION FRITTATA INTO THE ITALIAN CULTURE

    Onion frittata is a masterpiece of the Italian working-class! This low-cost and tasty recipe is mentioned in several famous books and movies, for instance the seventies cult movie “Il Secondo Tragico Fantozzi”, where the dream of a humble employee is a big onion frittata and an iced Peroni watching the soccer mach!

    CARAMELIZED ONIONS

    First of all, peel and cut the onions into slices ¼ inch thick. Then, pour the olive oil into a saucepan and place over medium heat. When the oil is warm, add the butter and melt it, then add the onion slices. Stir fry the onions 5 minutes, then add ½ tsp of salt and ⅓ tsp of sugar. Continue to cook the onions over medium heat stirring frequently, then low a bit the flame and let the onions cook until caramelized, stirring occasionally. Finally, pour the onion into a bowl and let them reach room temperature.

    EGGS MIXTURE

    Meanwhile the onions are cooling, crack the eggs and beat them lightly. After that, add 1 pinch of salt each eggs and pour the onions into the mixture. Finally add the black pepper and stir well.

    ITALIAN FRITTATA WITH ONIONS!

    Pour 2 tbsp of extra virgin olive oil into a no stick sauce pan large 10 inches, than place over medium heat. When the oil is warm, pour the eggs mixture into the pan. Cook 3 minutes over medium heat, then low the flame and cover with a lid. Cook slowly the Italian frittata until the eggs are almost set. Finally, place the pan far from the heat, then place a dish bigger than the pan over, and flip the onion frittata. Let the frittata slide into the pan and cook over medium heat a couple of minutes more. Serve warm or at room temperature with a green salad, creamy mushrooms or Roman style dandelions.
