- 2.75 cups (675 g) plain yogurt
- 2 (500 g) mangoes
- 4 tbsp (60 g) raw sugar (optional)
- 1.25 cups (300 ml) water
- 4 inches ginger root (alternatively, 1 tsp ginger powder)
- 4 inches turmeric root (alternatively, 1 tsp turmeric powder)
- 1 dash white pepper
- 1 pinch table salt
TIPS AND SUGGESTIONS
Mango Lassi is very simple to make and incredibly delicious. Here some tips and suggestions to make your drink even more tasty and easy to prepare:
ICE - In India it is traditional serving Lassi very cold. If your blender is strong enough, consider to use a quarter of the water amount solidified into ice cubes, and mix them at the final step along with the yogurt.
TURMERIC AND GINGER - If it is possible, I strongly suggest you to use fresh roots. Consider that the fresh turmeric stain the hands, so you want to use cloves to protect them. Alternatively, use ginger and turmeric powder.
SUGAR - Sugar is absolutely optional: consider to use or don't. Alternatively, honey is a delicious option.
SPICES AMOUNTS - Here I wrote my preferred quantities, but of course, feel free to change the amounts depending on your taste.
PREPARING LASSI IN ADVANCE - To speed up the preparation, prepare the mango juice the day before, and blend it along with the other ingredients just before serving.
MANGO JUICE
First of all, peel 2 ripe mangoes, discard the pits and reduce the pulp into pieces. After that, peel and grate the ginger root with a medium holes grater (it is the side with a cutting edge on bottom of the holes).
Now, pour the ginger pulp into a steel sieve and press with a spoon to obtain 3 tsp of juice: the more the root is fresh, the more will be easy to extract the juice.
Make the same with the turmeric root to obtain 2 tsp of juice.
Finally, pour the mango pulp into a blender along with the root juices, and the water, then mix a couple of minutes until fluffy and consistent.
Pour the mango juice into a jar and store in the fridge at least 20 minutes up to 24 hours.
MANGO LASSI
Now, pour the mango juice again into the blender along with the yogurt, the white pepper, and the raw sugar (consider that mango Lassi is delicious also without sugar).
Blend the mixture for 2 minutes and serve immediately.
