RED WINE REDUCTION RECIPE

RED WINE REDUCTION RECIPERed wine reduction is a simple basic recipe for many dish: stews, braised vegetables, even ice cream! Here I propose my personal recipe, just a base for your own creations!

  • 1 bottle (750 ml) red wine
  • 2 shallots
  • 1 tsp yellow mustard seeds
  • 1 tsp mixed peppercorn
  • 1/2 tsp cinnamon
  • 1 star anice
  • 2 cloves
  • 3 bay leaves

RED WINE REDUCTION RECIPE

RED WINE REDUCTION

Chop the shallots coarsely, then pour them in a small saucepan along with the spices. Now, add the red wine cold. Put the saucepan on the stove and bring to simmer slowly. Cook for about 1 hour after it starts simmering, until the wine will be reduced by half. And that’s all folks!

HOW TO CONSERVE

Pour the red wine reduction in sterilized jars. Store in the fridge up to three days or freeze up to 4 months.
