    ROASTED CAULIFLOWER DIP

    Today I propose a healthy, tasty, and very versatile cauliflower dip. It’s delicious with croutons and chips, and perfect to seasoning pasta or aside grilled meat! The ingredients are few and very simple; It will be a success!

    • 1 cauliflower
    • 4 tbsp  extra virgin olive oil
    • 2 cloves of garlic
    • 3 tbsp grated Parmigiano Reggiano cheese
    • 1 tsp grounded white pepper
    • to taste table salt

    Preheat the oven at 400° F

    FIRST STEPS

    Wash the cauliflower and separate the tufts. Boil the cauliflower in water or, even better, steam for 10 minutes. When the vegetables are cooked but still crunchy, lie down the cauliflower on a baking pan and season with salt to taste, 2 tbsp of olive oil and crushed garlic cloves.

    ROASTED CAULIFLOWER DIP

    Put the baking pan at 400 ° F and bake for 15 minutes; Then, broil until the tufts are golden brown. Now, blend the cauliflower and garlic along with the grated Parmigiano Reggiano cheese, 2 tbsp of olive oil, 3 tbsp of water (best if is the water used to cook the cauliflower), and grounded white pepper. If you prefer a more liquid consistency in your cauliflower dip, add a little 'of water, and blend again.
