SHRIMP RICE SALAD with lime and cumin dressing

Shrimp rice salad is one of my preferred recipes for summertime. Rice pilaf tossed with steamed shrimp, fresh coriander and spices is a thing that remembers me seaside and vacation. This is the perfect recipe to prepare in advance for a picnic on the beach! Even if it is possible serve this shrimp rice salad hot, I prefer taste it at room temperature or cold. Basmati is the rice I prefer for this recipe, but Arborio, Jasmine, brown or wild will work great as well, just remember to adjust time and cook technique depending the kind of rice.

GARAM MASALA CHICKEN with fresh ginger and beer sauce

This Garam masala chicken stew is one of my preferred Indian style recipes. To prepare this tasty dish I used traditional spices adding a personal touch: before stewing, the meat is braised into pale ale beer. This little exception to the traditional rules will give a special flavor to the meat: I’m sure you’ll love it as I do!

Tomatillo guacamole

The Guacamole is probably the most known Mexican recipe. The origin of this sauce is very ancient, and over the centuries has undergone many changes, and stimulated the creation of many variations starting from the original recipe. Today I propose you a version that provide for tomatillo instead of fresh tomatoes, as a very ancient Guacamole’s version requires. The sour taste of the tomatillo gives a surprising note, preserving the original flavor of the avocado. Try it on yourself, you’ll obtain a tasty and original Guacamole in a short time and little effort!
