CHICKEN CACCIATORE ITALIAN STYLE – pollo alla cacciatora

09/09/2016 by Filippo Trapella 1 Comment

Chicken cacciatore, is one of the most popular Italian recipes. Named “pollo alla cacciatora”, this recipe is prepared with some little differences in almost all the regions of Italy. I like sear the chicken reduced into pieces before slowly cook it into a fresh tomatoes sauce. Garlic, rosemary and give at the meat a delicious flavor. Even if it’s possible braise the meat with white wine, I suggest baste with red wine in order to make the taste of the sauce bold!

This BBQ pork fajitas recipe is great for a feast with friends! I love this easy dish, it does at your barbeque a South American touch. Just marinate the meat a few hours in advance with lime juice, Mexican amber beer, herbs and spices. When the time comes, bring with you marinated pork in a cooler and grill it along with mixed bell peppers!

EASY TOMATOES SAUCE ITALIAN WAY with garlic and fresh basil

07/24/2016 by Filippo Trapella Leave a Comment

This Easy tomatoes sauce is so tasty and fast to prepare! Tomatoes are cooked along with garlic and sweet basil, just the time to soft them. The more tomatoes are ripe, the more sauce will be delicious! To prepare this recipe a vegetable mill is not mandatory, but I strongly suggest to use  it. A blender works fine as well, but the sauce texture will be not the same!

AUTHENTIC RAGÙ ALLA BOLOGNESE recipe and history

05/19/2016 by Filippo Trapella 66 Comments

The Ragù alla Bolognese is one of the most important recipes of my own city, perhaps the most famous Italian dish in the world. Unfortunately, it is also the most mangling Italian recipe! For the Bologna’s people, ragù is a very serious matter, more than can be expected! The preparation of this great recipe is very easy but needs time, right ingredients and a very good thick-bottomed heavy pot. So, take your time and be prepared to taste something different than the ordinary international “Bolognese sauce”.

VEAL STEW with asparagus, mushrooms and potatoes

05/10/2016 by Filippo Trapella Leave a Comment

I love a good veal stew so much! If you desire a good stew out from the winter, this is your recipe! The veal meat is more delicate than beef, and it pairs perfectly with asparagus and mushrooms. A good white wine and fresh sage donate a tasty sour flavor. A suggestion: avoid cheap wine otherwise the sauce will be too acid!

CALF LIVER VENETIAN STYLE (fegato alla veneziana)

04/15/2016 by Filippo Trapella Leave a Comment

Calf liver Venetian Style is another recipe originating from the North Italian culinary tradition. The meat is stir-fried  just the time  to be medium cooked, and served with sweet and sour onions. This calf liver recipe pairs greatly with toasted bread slices or white polenta. When done, serve the liver immediately with minced parsley and black pepper, and don’t forget a glass of good white wine!

WILD BOAR STEW with mushroom and red wine

03/19/2016 by Filippo Trapella 4 Comments

This wild boar stew is one of my preferred stews! The meat is slowly braised into the wine for hours and the result will be a very soft and tasty entree. The preparation is quite long, but easy, and can be cooked one or two days before, it will be even more tasty! To cook perfectly this wild boar stew I discourage cheap wine, otherwise the taste will be excessively acidic!
