TUNA PASTA with olives, capers and tomato sauce

Tuna pasta is one of the most famous Italian comfort food! There are several version of this recipe. Today I prepared it with tomato sauce, capers and black olives. The most important think to prepare a tasty tuna pasta is add the canned fish just 5 minutes before toss and serve. Even if the sauce is perfect just cooked, the day after will be even more tasty! Just prepare the sauce one day in advance and toss with the pasta just before eating.

August, time of jarred food! Here a summer classic: The sun-dried tomatoes. To prepare dried tomatoes in the traditional way it takes a week of sun. Umm … a week… fortunately, there is another way to make delicious dried tomatoes in “only” 10 to 14 hours! This process is not fast, but the result is delicious, and it will comfort on cold winter days, bringing a little ‘sun even in December,unless you live in California, lucky guys!

baby artichoke in oil italian wayHomemade preserved vegetables in oil remind me some moments from my childhood: a kitchen tables full of vegetables, aunts, grandmothers, cousins, and brothers intent to peel and cut, acrid smells in the air and the atmosphere of a peasant festival. A lot of work and waiting weeks before sampling the product of our toil, but it is so good, really better than the preserved sold at the store! Today I prepare artichokes in one of the many classic Italian versions (because basically every Italian family has its own recipe “classic”!). To savor this delicacy is indispensable to perform certain steps strictly in order to avoid dangerous contamination.
