Pesto arugula is a quick and easy recipe, very versatile. Thanks to my friend Erik and his beautiful garden, I can prepare this recipe with fresh organic arugula! I love the bitter taste of this green, balanced with the sweet and sour flavor of Parmigiano Reggiano and pine nuts. Pesto Arugula is perfect to toss pasta, but is great also as seasoning of baked or boiled vegetables and chicken or brisket salad. Try it on simply spread on toasted bread as well, it is delicious!
The Ragù alla Bolognese is one of the most important recipes of my own city, perhaps the most famous Italian dish in the world. Unfortunately, it is also the most mangling Italian recipe! For the Bologna’s people, ragù is a very serious matter, more than can be expected! The preparation of this great recipe is very easy but needs time, right ingredients and a very good thick-bottomed heavy pot. So, take your time and be prepared to taste something different than the ordinary international “Bolognese sauce”.
Tuna pasta is one of the most famous Italian comfort food! There are several version of this recipe. Today I prepared it with tomato sauce, capers and black olives. The most important think to prepare a tasty tuna pasta is add the canned fish just 5 minutes before toss and serve. Even if the sauce is perfect just cooked, the day after will be even more tasty! Just prepare the sauce one day in advance and toss with the pasta just before eating.
Mushrooms and sausage pasta is another classic Italian. Mixed mushrooms pair perfectly with pork meat. Fresh parsley and grated Parmigiano Reggiano, add more flavor. Even if is possible prepare this recipe with all kind of pasta, I prefer short size as penne or maccheroni. In this case I used extra thin penne, called in Italy Pennette. I like complete this pasta with grated raw mushrooms, to taste all the different fragrance and consistency of mushrooms!
Cuttlefish stew with green peas is a classic Central Italian dish. Lazio and Campania cuisines are fighting the fatherhood of this recipe for centuries, and the question in not resolved yet! The cuttlefish are slow cooked with a tasty tomato sauce. The green peas have to be soft but not mushy. I like serve this cuttlefish stew with bread slices, but it is very delicious served with rice or tossed with pasta as well!

The Guacamole is probably the most known Mexican recipe. The origin of this sauce is very ancient, and over the centuries has undergone many changes, and stimulated the creation of many variations starting from the original recipe. Today I propose you a version that provide for tomatillo instead of fresh tomatoes, as a very ancient Guacamole’s version requires. The sour taste of the tomatillo gives a surprising note, preserving the original flavor of the avocado. Try it on yourself, you’ll obtain a tasty and original Guacamole in a short time and little effort!

The sausage sauce is a classic peasant recipe. It is prepared with some variations, in many parts of Italy. As I said, there are many versions: with peppers, or mushrooms, or simply tossed with pasta and a few tablespoon of whipping cream! Today I decided to combine this tasty sauce with a simple tomato puree, used to be presented frequently at my family’s table. The preparation is not difficult, but requires a few precautions. The sausages must be cooked until golden brown, then being dipped into the tomato puree. After that, is mandatory to proceed with a very slow cooking until the meat is extremely soft. The best way to taste the sausage sauce is with a kind of pasta of your choice, in particular fresh pasta, rigatoni or shells.

For the “Cinco de Mayo” I desired to eat a delicious Mexican chicken (like all of us!), but not one of the usual Mexican recipes. I wanted to find out a recipe that I had never experienced before. After a little ‘research, I chose the chicken in “Salsa de Almendras”, a fantastic, quite unknown, recipe made with almond sauce. If you’ve never tried it, I highly recommend it! The recipe that I’ve written below is faithful to the original, I followed a small personal variant only finishing the dish to make the almond sauce even more creamy!
