Peas and Pancetta is a classic Italian pairing: a tasty side dish or party appetizer. The sweetness of peas contrasts pleasantly against the rich taste of Italian Pancetta. In this case, I’ve added seared slices of mini bell peppers and fresh parsley: simple and delicious!
Honey Mustard Chicken thighs is a very popular recipe. Everyone has his own version! Here my way with juniper berries, bay leaves, carrot sticks and snow peas. Considering the sweetness of the honey, the right amount of chili pepper helps to balance the final taste.
Today roasted mixed vegetables! This recipe is great all year long, but I like serve it aside grilled meat or egg frittata in my garden enjoying a summer dinner with my friends. At this time, I choose my preferred vegetables and cheese, but it’s possible change ingredients as you prefer. Stuffed jalapenos is a classic Mexican recipe. Today I prepared them with a touch of Italian style! Into the stuffing, the sour taste of goat cheese is well balanced with the sweet of potatoes and a pinch of cumin flavor. Sweet basil and Italian sausage recall my own country. This recipe is perfect as appetizer or on your party table, served hot or warm, as you prefer!
A farro salad is a great way to say hallo at the warm season! This healthy recipe is perfect to be prepared a little in advance. Bell peppers and zucchini squash pair greatly with the taste of farro, but if you prefer, it’s possible utilize other vegetables.
Pan roasted rabbit is a great Easter recipe. The rabbit is quickly seared until crispy, then braised slowly with white wine, shallots and green olives. This pan roasted rabbit is very good just cooked, but even more delicious re-hated the day after. For this reason this is a perfect dish to prepare in advance!
Stir fried dandelions and potatoes is a quick and tasty Italian classic. Commonly, it is served as a hot salad for appetizer, or aside meats, eggs, or salty fish, like anchovies or sardines. I really love stir fried dandelions, they are very healthy greens! Their bitter taste pairs perfectly with the sweet of golden potatoes and the salty flavor of Pecorino Romano cheese. When the weather permits to grill outside my house, the stir fried dandelions are a must-to-eat aside steaks and sausages!
Sometimes I just want to cook a simple dish, tasting sharp, to prepare in a short time using only one pan. A recipe to share with friends, drinking a glass of beer, watching the game or making small talk. This is one of those recipes! Tasty stir-fried sausages chunks with red potatoes and Brussels sprouts. The shallot bites add a unique and delicious taste!
The idea for this risotto came to me a few years ago when I was still living in Bologna. I wanted to combine the classic tradition of risotto with something different, using both meat and fish (which in Italy is not very common). The result was excellent: every time I prepare it, it is a success, both with Italians and friends from other countries. Crispy bacon goes well with the softness of the salmon and the sweetness of the pepper; saffron completes the whole and allows the risotto to become creamy.
