Homemade tortellini is one of the most important recipes of my hometown, Bologna! Along with Bolognese ragù and Lasagne, this recipe is an authentic icon of the Emilian culinary tradition. Here I’m telling you the history, the legend, and the traditional way to make tortellini. Not really easy to prepare, but a masterpiece of the Italian culture!

STUFFED MUSHROOMS with Gruyere cheese

05/29/2016 by Filippo Trapella Leave a Comment

Stuffed mushrooms are a perfect recipe for party! Tasty bites flavored with creamy egg and cheese filling, soo good! Stuffing my mushrooms, I opted for Gruyere. I love this cheese, it’s perfect to be melted, but Italian Fontina, or Provolone, or Gouda are delicious as well. Same thing for the herbs: today I choose parsley, but sometimes I opt for fresh oregano or dried mint, try them on and let me know!

STUFFED JALAPENOS with potatoes, sausage and cheese

Stuffed jalapenos is a classic Mexican recipe. Today I prepared them with a touch of Italian style! Into the stuffing, the sour taste of goat cheese is well balanced with the sweet of potatoes and a pinch of cumin flavor. Sweet basil and Italian sausage recall my own country. This recipe is perfect as appetizer or on your party table, served hot or warm, as you prefer!

STUFFED SQUID RECIPE with broccoli and potatoes

Yesterday I cooked a simple and tasty recipe: the stuffed squid with potatoes and broccoli. This fun recipe is excellent both as appetizer or entree. The stuffed squid have to be baked quite fast and the oven must be very hot. To speed up the preparation is possible to prepare the filling in advance, filling the squid just before cooking them.

STUFFED SUMMER SQUASH with cauliflower dip and crispy bacon

07/14/2015 by Filippo Trapella Leave a Comment

Stuffed summer squash with cauliflower dip and crispy baconA few days ago, two nice sisters were guests at the Columbus Italian supper club. The dinner was a success, and my two new friends gave me a basket of summer squash, grown in their garden. The next day, I create a recipe that would emphasize  the genuine taste of these wonderful vegetables. I decided to cook stuffed summer squash  with a soft and delicate cauliflower dip. To add a crispy note and flavorful, I mixed the dip bacon flakes, Parmigiano Reggiano cheese and a sprinkle of black pepper. The result was surprising. A summer dish, tasty and rich in vitamins!
