Roasted carrots with balsamic and arugula pesto is an healthy vegetarian salad. I love the sweet taste of the carrots glazed with balsamic vinegar paired the bitter of arugula. To obtain a perfect balance between these strong flavors a very good quality balsamic vinegar is mandatory, otherwise the taste will be too sour!

Red lentils dal recalls me my first trip in Asia. It was July 1999, and in that time I used to live for travelling. The fist region I visited was North India. I was vegetarian, and on shoestring, so between me and any kind of dal was love at first sight!

Preparing red lentils dal is very simple, but is mandatory pay very attention to the spices, they must be of first quality. Cooking with vegetable oil instead ghee, makes this recipe a good source of protein for vegan diet.

Tired of the winter? In this case, it’s time for a dinner that will warm your soul and your palate! The lentil and green pea soup is a classic of the peasant cuisine. I really like to prepare it during the last days of winter: its warmth comforts me and green peas remind me that the  spring is coming! In this case, I served the soup with crispy croutons, but if you prefer add rice, pearl barley, or spelt, cooked in the vegetable broth along with the vegetables.
